Hello Solange! What a great idea. :) I really love vegetarian food, and I would happily be a vegetarian if it weren't for my husband--he is a big meat lover. I had to think for quite a while to pick just one vegetarian recipe that I love, since almost everything I eat is vegetarian.

I love salads, especially, their crispy crunch and all the variety that can be had. One recent favourite is spicy cucumber salad with toasted almonds. Cucumber is always thought to be bland, but in this salad it becomes really interesting and refreshing. Thanks for all your good ideas lately; I look forward to reading more.

That would have to be aubergine parmigiana or a variation of that dish. Any ingredients are fine after a base of tomato,cheeses,aubergine and herbs. Makes me hungry just thinking about it!

It's got to be a Warm goat's cheese on a bed of spinach and green salad - topped with cranberries and roasted pecans and caramelized onions. That's a firm favourite.

I have to say that now the summer months are here and my herb garden growing, my favourite dish is couscous flavoured with lots of mint and lime juice, chickpeas and some griddled halloumi on the top ... gorgeous!

My current favourite is a Middle Eastern dish called Mejadarah. Cook brown rice and green/brown lentils in seperate pans. Meanwhile caramelise mountains of thinly sliced onions in olive oil, and flavour with cumin seeds, ground cinnamon & turmeric.Combine cooked rice/lentils with half the onion mixture in a large bowl. Add a handful of cashews/blanched almonds to the rest of the onion mix and keep stirring until lightly browned. Pile the rice/lentil mix onto a serving dish - top with the onions&nuts,&garnish with lots of finely chopped flat-leaf parsley & quartered lemons/limes. Best served at room temperature with lots of salads, tomatoes,olives etc.

Have just spent 10 minutes drooling over the pictures of your dishes. Now I have to think of something good to suggest as my top dish.

It has to be an omelette, I usually have mushrooms and leeks in there. If the whites are seperated from the yolk and whisked, and then folded into the mix, the omelette achives a lovely fluffy consistency. Yum!

Yay for vegetarian food! My top dish has to be a goats' cheese and caramelised onion tart, probably with baby spinach leaves and halved cherry tomatoes on the side in a balsamic dressing.

Anything with aubergine is a big hit for me. I'm particularly fond of smoked aubergine, especially in Indian food...

ooh fabulous! Sarah at Maison Cupcake pointed me your way. I'd happily eat vegetarian 6 days of the week, but this mag would be a great way to convince my other half to eat veggie more. My personal favourite veggie recipe is a roast butternut squash and deconstructed hummus salad - you roast the squash with cinnamon and garlic then toss it with a tin of chickpeas and thinly sliced red onion, with a dressing made from tahini, garlic, and a bit of water. Absolutely lovely, and even better the next day.

@cooksisterblog spread the news and I am happy...I have been a vegetarian all my life and what I love the most is a simple chickpea curry called "channa masala/chole" back home with some fluffy basmati rice seasoned with cardamom and cumin seeds..some popadums and cucumber raita...

My favourite vegetarian dish is Buckwheat Bake which I found in the first Crank's cookbook. I often made it in Russia where buckwheat is easily available and quite inexpensive. You must use roasted buckwheat, however.
