Sexy Lettuce & Ginger Soup

What is all this about, I can hear you say. Well, in plain: keywords. I was looking at the traffic on the blog and it will not surprise you to read that Soup was in the top search keywords. Thinking about this, I realised that though making really good soups, I was not sharing my soup recipes with you. There is so much else to write about, so I shall refocus starting with Lettuce and Ginger soup.


Now why sexy. Keyword ....hmm may be, but there is a little more to it. ince what we have here is a gorgeous looking soup, fresh and full of the promises of spring made of vegetable loaded with properties. Lettuce contains mood-enhancing chemical perfect for mid-winter blues. Lettuce diminishes cholesterol, has a tranquilising effect, improves blood circulation. In the ancient days the sap was though to appease sexual appetite.


Lettuce and Fresh Ginger Soup
serves 4
Ingredients:
2 Carrots peeled and finely chopped
2 Onions finely chopped
1 Iceberg lettuce, shredded
4 Slices of fresh ginger, peeled and grated fresh ginger
4 Slices of ginger peeled and grated
25g/1 oz Butter
1 Tbsp Parsley leaves, chopped
1 Tbsp flour
1 litre/ 1. 1/4 pint Boiling chicken stock
Salt and pepper
50ml / 2 fl oz Single cream

Method:
  • Saute the onions and carrots in the butter until soft but not coloured
  • Turn the heat and quickly saute the lettuce, ginger and parsley until they wilt
  • Sift in the flour, stir thoroughly
  • Pour on the hot chicken stock simmer for 5 minutes
  • Puree in a liquidizer
  • Pour through a fine sieve into a clean pan (optional)
  • taste and season
  • Serve with a swirl of cream

What type should be used?

I did also note that you say that 50ml of cream is one and a half cups. Which measurement is correct please?

So sorry, sometimes in the heat of the kitchen, proof reading melts like ice cream on the burner. But that is no excuse to forget the main ingredient.
